Zuchinni Oatmeal Dark Chocolate Chunk Cookies
How do you make a ordinary Monday a fantastic Monday? You start off your morning with a run and in the afternoon, you make cookies.
Zuchinni oatmeal dark chocolate chunk cookies that is.
This afternoon, I realized I only had one of my healthy cookies left. Thankfully, within a half an hour that changed.
During the week, I love having healthy desserts on hand. That way, when my sweet tooth strikes, I have a healthy option to reach for!
These cookies are soft and tender, like a cross between zuchinni bread and a regular oatmeal cookie.
Enjoy with a cup of milk or (highly recommend a hot cup of coffee!)
Zuchinni Oatmeal Dark Chocolate Chunk Cookies
Ingredients
- 2 c. Shredded zuchinni
- 2 tbsp. Melted coconut oil
- 2 large eggs
- 4 packets stevia
- 1 1/2 c. Oats (1 c. blended into oat flour, 1/2 c. Whole oats)
- 1 tsp. Cinnamon
- 1 tbsp. Flaxseed
- 2 tsp. Baking powder
- 1/2 c. Dark chocolate chunks (or more for good measure!)
Method
Combine shredded zuchinni with wet ingredients. Mix together dry ingredients in a separate bowl.
Combine wet and dry ingredients together.
Once mixed, let chill in fridge for 10-20 minutes while oven preheats and the kitchen gets cleaned!
Bake at 350 for 15 min.
Let sit (if you can wait!) for 5-10 minutes until you serve.
