WIAW: Pumpkin Maple Oatmeal
I know I just said goodbye to fall, but as I ended the last post, that doesn’t mean that I am a going to give up my fall flavors (and maybe candles) that quickly.
Yesterday morning, after my six-mile run on the treadmill, I came upstairs and made some Pumpkin Maple Oatmeal. It’s easy, fast, and super delicious.
I am sharing this recipe with you because of two contributing factors:
1. It is so delicious
2. I am a terrible blogger and forgot to take pictures of all my eats yesterday. Emergency plan is now in action.
So we are still celebrating WIAW, but just a little differently today. Hope you all enjoy these oats as much as I did yesterday!
Pumpkin Maple Oatmeal
Serves: 1
- 1/2 c. Oats
- 1 c. Water (or milk)
- 1/4 c. canned pumpkin
- 1/2 tsp. cinnamon
- 1/2 tsp. maple extract
- 2-3 Stevia packs (or honey/brown sugar/ etc.)
- all natural peanut butter
Combine first five ingredients in microwave safe bowl. Microwave until oats are creamy. Add sweetener and top with peanut butter. I always let my peanut butter melt in a giant pool before eating. Just trust me. Find a spoon and enjoy!
