Vegetarian Lentil Soup
Warm, hearty, and comforting, this vegetarian lentil soup is packed with veggies, protein, and flavor! Serve with a light salad and crusty bread.
One of my favorite soups is lentil soup. There are so many variations that I’ve tried over the years, but my favorite, without a doubt, is my mama’s vegetarian lentil soup. The spices, vegetables, and brown lentils in this soup, not only fill the stomach, but warm the soul! I grew up eating this soup and I can’t wait to serve it to Benaiah one day too.
Another thing I love about this dish? It’s super easy. All you have to do is chop some veggies, saute them for a little while, throw in some spices, lentils and stock, simmer for one hour and tada- homemade, delicious, lentil soup.

I usually serve this soup with either a light salad and rolls. Warm carbs + hearty soup = bliss.
Vegetarian Lentil Soup
- 1 small onion
- 2 tbsp. Olive oil or coconut oil
- 1 green pepper
- 1 small potato
- 1 small sweet potato
- 2 large carrots
- 2 ribs celery
- 1 tsp. chili powder
- 1 tsp. cumin
- 3/4 tsp. allspice
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 1/2 c. dried lentils
- 6 cups vegetable stock
Method
Dice all vegetables. Saute onion in olive oil in a large pot until translucent. Add all other vegetables and saute for three minutes. Add spices and saute a minute more. Once all veggies are sauted, add the dried lentils and vegetable stock. Bring to a boil and reduce to a simmer. Simmer for an hour and serve hot. Enjoy!
