Tuesdays at the Thompson’s: Running, Coffee and Pancakes
Hello friends and happy Wednesday, I am popping over here today, sharing a little sneak peek into a typical Tuesday around here. Our days are interesting, as I balance athletic goals, motherhood, running, wife life, business, and coaching all at the same time. Not every day looks exactly the same, but I do try to keep things in the same flow as much as possible. With the recent changes around here (moving/job change/etc) it’s been a little harder to find our groove again, but I am happy to report I feel like we are finally finding rhythm and man, does it feel good.

Morning Routines + Breakfast + Run
After a super fun and exhausting weekend (holiday weekend + Benaiah’s birthday) I was exhausted on Tuesday morning and opted to sleep in for a little bit and catch up on some much needed rest. While I slept, Landon got his workout in. Eventually, I got out of bed, got some coffee and had my devotions. Once Benaiah woke up, we said goodbye to Landon and Benaiah and I got started making homemade blueberries pancakes. Something I am focusing on with Benaiah right now is fine motor skills. I thought having him help me make the pancakes would be a fun way to get some of those skills in, early morning, and it worked out well. Niah enjoyed cracking the eggs and measuring the flower and he surprisingly, did a great job!
Mondays around here are usually low carb days for me (but I switched it to Tuesday because of the holiday) and normally, that means my typical smoothie gets replaced with a big plate of scrambled eggs with some low carb veggies. My favorite mixture of late is 2 eggs + 2 egg whites + zuchinni + onion + broccoli with some avocado on top. Filling and super flavorful. Usually, I make my smoothies most mornings, but because I HAVE to have a frozen banana in my smoothies, I wait until Tuesday to make my smoothie. Tuesday, however, I wanted to run fasted, so I skipped my normal big breakfast (Benaiah enjoyed his pancakes), and ran 3.5 miles with Benaiah in the stroller. After a lot of runs that have felt uncomfortable with my plantar plate strain and a tight Achilles – this run (pain free!) felt so good! This season of running has been frustrating, I’ve felt discouraged, and upset that I haven’t been able to hit the goals I wanted because of my planter plate injury and then a irritated Achilles. And yet, this is where I am. I’m running 3-3.5 miles as my average run, I’m running the miles all easy pace until I build a base, and I’m not running the marathon I hoped to run (it is this weekend, haha) And you know what? I’m okay with where I am at. I’m hungry. I’m eager to be back to peek running fitness and heavy training – but I’m not and I shouldn’t rush it. They say good things come to those who wait, so I’m waiting. And pushing forward. And celebrating each little, tiny victory – because I know this is part of the process, it’s part of the road to success. And really victories wouldn’t be nearly as sweet if we didn’t have the struggle in getting there, right?
While we were out, Benaiah and I walked downtown and stopped at our favorite, local coffee shop. This coffee shop is seriously the cutest shop ever and plays a vital role in the community. My Half of the Sky helps women overcome red light situations (i.e. sex trafficking, abusive relations, etc.) and a large majority of the proceeds go towards helping local women and toward fair trade, organic companies with similar missions. Awesome mission + awesome coffee = a top, favorite shop. Benaiah requested a vanilla cookie and although it was only 10:45 am, I couldn’t resist his sweet request. He asks for it every time we go together and every time I redirect him towards something else. This time though, I caved and it was the sweetest thing ever. I bought a milkdamia iced latte (espresso + macadamia nut milk) and sipped it while Benaiah walked around the shop.
After our coffee + cookie stop, we walked downtown, looked at construction vehicles and went to a museum. He loves anything that has wheels and we made sure to find every.single.one around town.
Once we got home, I made a huge salad with mixed greens, nuts, all the veggies, fresh mozzarella, and avocado. It hit the spot and shortly after eating, Benaiah went down for his afternoon nap.
Work Hustle
Nap time = mommy hustle time and I got to work on dinner prep, while listening to Grant Cardone’s Be Obsessed or Be Average. After dinner prep was done, I worked on some training plans, wrote up a couple blog posts, and posted on social media while sipping on some hot coffee. Afternoons are some of my favorite times of the day.
Dinner + Family Time
Landon got home around 6 and then it was time to get dinner on the table! We did a simple dinner of an egg veggie scramble with leftover pancakes on the side (I stuck with eggs/veggies/avocado to stick with my low carb day). Since Landon had men’s ministry in the evening, we had a quick time as a family and shortly after Landon left, Benaiah and I spent the rest of the evening playing with trucks, reading stories, and listening to music. After Benaiah went down, I got to work on preparing Landon’s lunch, cleaning the kitchen and packing for an upcoming trip I have planned with my mom and family! (I will share more on that later.)
And now, I am finishing writing up this post and thinking about grabbing some sparkling water from the fridge.
