Trail Mix Granola Bars
Crunchy on the outside, and chewy in the middle, these granola bars are not only packed with delicious flavors and textures, but lots of protein to keep you full (and happy!) between meals.
I don’t know about you, but I like a good snack every now and then – OK well, I like a good snack every day. 😉 When I have a snack I try to make sure the snack is nutritious, has some veggies in it, or make sure that it’s packed with protein to help keep me until my next meal.
There are a lot of creative ways to sneak in protein into your diet, some of my favorite ways are yogurt, cottage cheese, eggs, a protein shake, or slices of turkey meat.
Today, I wanted to share one of my new favorite ways to sneak protein into my diet, plus this recipe almost tastes like a cookie, so I would say, it’s a win.
These trail mix granola bars are packed with lots of flavor, texture, and protein thanks to nuts, peanut butter, and protein powder. (Let me just say how much I love protein powder! It is so versatile, tasty, and nutritious!) So, with each bar, you’re getting a substantial amount of protein to help fuel you throughout the day.
These little guys are perfect for pre-or post workout snacks, mid afternoon treats, dessert or even breakfast. Something else that’s great about this recipe? You only have to use one bowl! Nothing beats a one bowl recipe, in my opinion.

Trail Mix Granola Bars
Ingredients
- 1 cup peanut butter (or almond butter if allergic to peanut butter)
- 3/4 cup of melted coconut oil
- 1/4 cup pure maple syrup
- 1/2 cup honey
- 3 cup oats
- 2 scoops vanilla Designer Protein powder
- 3 Tbsp. Chia seeds
- 1/4 cup flaxseed
- 1/2 to 1 cup trail mix (I used a Trader Joe’s brand, that had almonds, raisins, cranberries, blueberries, and walnuts, and it.)
Method
Add all ingredients to large mixing bowl, stir until combined. Once combined, press into a greased 9×13 pan. Bake at 375 for 25 to 30 minutes, or until granola bars are golden brown around the edges. Remove from oven and let cool before slicing. Enjoy!
