Simple Cheesy Potato and Kale Quiche
Landon and I are big egg fans. I don’t know of many other foods that are so versatile. We make scrambled eggs, fried eggs, egg wraps, egg salad, 2 ingredient pancakes, hard boiled eggs, and when I’m feeling fancy…quiche.
I don’t know why I wait for special occasions to make quiches, because, really they are so simple!
Last night, I felt extra ambitious and whipped this quiche up for dinner tonight. Don’t you just love it when dinner is all prepared ahead of time? I sure do!
Simple Egg, Potato, Cheese, and Kale Quiche
- 8 large eggs
- 1/4 c. Milk
- 3 large potatoes (peeled, cubed, and cooked)
- 6 oz. cubed sharp cheddar cheese
- 1 c. Chopped kale or spinach
- 1 tsp. Salt
- 1 tsp. Garlic powder
- 1 tsp. Parsley
Method
Peel, cube and cook potatoes (I boiled them) until fork tender. Drain and set aside. Whisk 8 eggs together, add milk, cheese, seasonings, kale, and potatoes.
Pour mixture into greased 8 inch glass pie plate.
Bake at 350 for 25 min.
Cool for 5-7 min before cutting. Serve with whole wheat toast and fruit. Enjoy!
