Peanut Butter Krispie Protein Bars
I really like peanut butter.
Especially slightly salty, sweet peanut butter.
When I made this recipe and found that it was not only salty/sweet, but slightly crunch and chewy my day went from average to exciting.
If you are looking for a quick, healthy, on-the-go protein bar fix, this one is for you! It is super easy to make and pretty inexpensive too! In my book, that is a win, win! So, without further ado, here is the recipe!
Peanut Butter Krispie Protein Bars
1 c. all- natural peanut butter
3/4 c. honey
1 c. oats
1 c. protein powder (I used vanilla whey)
1. c rice cereal (rice krispies, rice chex, etc.)
2 1/2 tsp. vanilla extract
1/2 c. flax-seed
2/3 c. chocolate chips (optional)
Combine oats, protein powder, flax-seed, and cereal in large bowl. Set aside.
Bring honey to a boil on the stove. Remove from heat and stir in peanut butter and vanilla until smooth. (Try not to eat it all at this point!) 😉
Immediately add honey mixture to oats/whey/flax/cereal. Stir until combined.
If adding chocolate chips, stir in and press into 8 x 8 square pan. Refrigerate 20 minutes or until firm. Cut into 12 bars and serve. Store bars in an airtight container.
Variations:
Almond butter instead of peanut butter
Raisins instead of chocolate chips
Add nuts/shredded coconut/ etc.
These bars are so quick, easy, and convenient for traveling, pre- workout or post-workout, or even a fast breakfast! Hope you all enjoy them as much as we do!
