Monday Meals with the Thompson’s

I’m currently writing this, finally warm from an arctic run outside and nibbling on the rest of my son’s cookie he got from a local coffee shop. Cookie hoarding and defrosting aren’t typically what all Saturday’s look like around here, but I will take it. Speaking of cookies, I find it strange how I really never crave a good cookie until December 1st and then BAM just like that, all the cookie cravings hit. And when the hit, they hit HARD. Which is why you will probably see some cookie recipes linked below for good measure here too. Must make the most of the Christmas season, right? Right.

While I am sitting down, sipping on my coffee and cherishing the last few bites of that delicious morsel of goodness, I figured it would be a good time to write out my weekly meal plans, so I am better equipped for a hopefully slower week than the rest of our weeks, ahead.

Here’s what’s on the menu, for the week – I hope these inspire you and give you a little encouragement to get in the kitchen, make a mess, and have fun!

MEAL PLANS 

Monday – Chicken fajita salads (grilled chicken + lettuce + guacamole + quinoa/rice)

Tuesday – Shepherd’s pie (one of Landon’s favorites) + a simple salad on the side (this will be on a speed workout day for me and a perfect way to refuel my tired legs! I will probably through in some meat with this too)

Wednesday –  Warm root salad, salad + grass fed beef meat balls

Thursday – Vegan enchiladas (these are seriously SO good!)

Friday – Homemade pizza + side salad (pre-long run meal!)

Saturday – Vegan chili (prepped and ready post-tree farm!)

Sunday – leftovers

SNACKS/EXTRAS 

Homemade almond milk (I don’t always make this weekly, but I LOVE it when I do! I love saving the almond meal for muffins, pancakes, etc.)

Peanut butter cookies

And that’s a wrap! I can’t wait to get in the kitchen and get this stuff happening!
