Meal Plan for the Thompson’s
Hello there and Merry Christmas and Happy New Year. I know I’ve been quite MIA over here and not to worry, all is well. I have found that these past 90 days are so have been very busy and balancing blogging/coaching/momming/and wifing is proving a balancing act.
Needless to say, as I look ahead to 2019, I am trying to decide where to pull back and where to dive in deeper. For now, I will be blogging two to three times a week, to assure quality content over quantity.
Today, I am sharing a peek into our meal plans for Monday through Sunday. Meal planning always helps me stay on track with the budget and with cooking and helps me feel less frazzled. All good things.
Monday – Meatless Mondays = black soybean spaghetti + sauteed carrots, broccoli and onions topped with nutritional yeast! So good!
Tuesday – Taco Tuesday/ using this recipe
Wednesday – Split pea soup (using a recipe similar to this)
Thursday – Breakfast for dinner // kodiak cakes + scrambled eggs!
Friday – Homemade pizza + dinner salad
Saturday – Salmon + roasted root vegetables
Sunday – leftovers
And there you have it! Meals for the week and we are ready to tackle the rest of life. What are you making tonight?
