“In the Morning I’m Making Waffles” (Weekend Recap)
Good morning and how are you today? I hope you are popping into the blog today sickness free, because I think our house has finally gotten hit with the dreaded illnesses that are going around! Thankfully, we aren’t suffering terribly, just a little stuffy nose topped off with a headache and overrall blah feeling for me and Landon. I’m grateful Benaiah doesn’t seem to have anything yet and praying it stays that way!
Since I didn’t get my weekend recap up yesterday, I’ll share a peek into our rather relaxed, somewhat lazy weekend.
Friday Night
I shared this picture yesterday, but didn’t mention the meaning behind the photo! (No, I’m not pregnant again.) Friday night, my sisters came over and stayed later than normal in order to watch the little man so Landon and I could have our first Benaiah free date! It was super refreshing and very needed. We went into Saturday morning feeling relaxed and already rested. Thank you, Abby and Emily for the break!
Saturday
Saturday morning started off with a run for both Landon and I. Since the weather was in the low 20°s, we both opted to use our new treadmill and kill our mileage there. I ran three miles (my longest mileage since my hip flexor injury!!) while Landon watched Benaiah. While running I watched the documentary, Fed Up, which focuses on childhood obesiesty and the link between sugar and diabetes and other health challenges. I found it super interesting and it definitely made me think twice before indulging in any sugary weekend desserts.
The documentary did not, however, discourage me in my Saturday morning (eh, lunch) waffle making endeavor. Since we had a slow morning of devotions + two runs, our breakfast ended up for as a lunch.
Large appetites = egg scramble and homemade gluten free banana waffles. (I used this recipe.)
Since Landon and I don’t share breakfast together during the week, one of our current traditions is making a filling breakfast or brunch Saturday mornings. I love sharing these Saturday morning moments together as we savor waffles, eggs, French toast, or pancakes together. Basically, Friday night, I’m usually thinking somewhere along this line of thinking… >>> “In the morning, I’m making waffles!” After our traditional fun breakfast, we spent time cleaning the house, organizing, and setting up a new desk.
The rest of our day was filled with playtime for Niah, checking off random TO-DO list items, leftovers for dinner, and homemade banana ice cream shakes.
Oh, and we finally finished this puzzle that we’ve been working on for quite a while.
Sunday
Our Sunday morning started off with the usual. Coffee for both Landon and I, while we quickly got ready for church. After protein shakes for us and a full/happy Benaiah, we left the house for our Sunday morning service.
Landon and I thoroughly enjoyed the sermon and we stayed extra late since I’ve recently started helping lead a girls’ Bible study. I loved this first week and look forward to our next meeting! After my girls group was finished meeting, (shout out to Landon watching Niah for that hour!) we make a quick trip to return some pants (which didn’t end up working out), and then headed to Landon’s grandma and grandpas’ home for a visit.
Benaiah quite enjoyed the attention and grandma served us coffee before sending us home with cookies. I totally failed to get pictures from that trip, but here’s a glimpse of one of our semi-recent trips to visit
Ahh, he was so small. Que all the hormonal mom tears.
The rest of our Sunday was spent enjoying salads for dinner, complete with roasted sweet potato wedges, large bowls of popcorn, and apples.
We ended the night curled up on the couch watching our current favorite show, Fixer Upper, and dreaming of the future – pretty much my favorite way to end every night.
As noticed, we didn’t end up watching the Super Bowl (which is so unlike me), but I enjoyed our relaxing Sunday and it was just what we needed.
