Favorite Sweet Potato Casserole
Most people know that sweet potatoes are my favorite. Because they are my favorite, I generally bring them to any family gathering we have during the holidays. I have tried several different sweet potato casserole recipes, but this one is my favorite. It was slightly adapted from Gina, at Skinnytaste.com. It is slightly different from any other recipe that I’ve seen, but still as delicious. It is also a lot healthier for you than the traditional recipe, which is always a win. Sweet Potato Casserole
- 5-7 Large Sweet Potatoes
- 1 Tsp. Agave
- 1/2 cup golden raisin
- 1/4 tsp. cinnamon
- pinch of allspice
- pinch of nutmeg
- 8 oz. crushed pineapple (drained/ reserve juice)
- 1 c. mini marshmallows (optional)
Scrub, poke, and bake sweet potatoes at 415 until fork tender. (This will take 45 minutes to an hour). Once cooled, remove skins and purée in food processor until smooth. Once potatoes are creamy, transfer to bowl and add agave, raisins, cinnamon, allspice, and nutmeg. Mix until everything is combined. Once everything is mixed together, fold in 8 oz. of crushed pineapple and 2 tbsp. of reserved juice. Transfer from bowl into medium baking dish and top with marshmallows. Bake at 350 for 30 minutes or until marshmallows are golden brown and center of dish is warm. Serve warm. These are best warm, but I enjoy them cold the next day too.
