Dinner’s at the Thompson Household: Weekly Meal Plans
This week, is kind of weird, because Landon is spending some time with some friends and I am having some girl time (this month has been a weird month of traveling + businesses). Sometimes, when we have busier weeks, meal planning is easier because we just throw everything into a bowl and call it good, but I don’t love when that happens. So, instead of not meal planning, I am going to actually meal plan and get it done. So far, this is what we have on the menu (recipes linked, below too.)
Monday – grilled chicken+ sauteed peppers, onions, and zucchini. (Monday’s are low carb days for me so usually on Mondays we eat a higher protein + lower carb dinner)
Tuesday – Taco Tuesday! Vegan taco meat + toppings with a side salad on the side.
Wednesday – veggie burgers + salad (my second and final low carb day of the week) + sweet potatoes
Thursday – Protein salads, topped with veggie burgers (lettuce + quinoa + seeds + any veggies + homemade croutons + veggie burgers) with a side of sweet potato fries OR quiche
Friday – Homemade pizza + salad
Saturday – Six veggie soup + crusty bread and side salad
Snacks/Treats
3 Ingredient Chia and Quinoa Flatbread (vegan)
Sweet potato brownies (literally one of my favorite things, ever)
Quick and easy granola bars (we eat these a lot)
And that’s it. As you can tell, we are pretty simple when it comes to dinners around here. I try to keep them simple, yet nutritional and tasty. I’m all about quick, filling, nutritional and fun meals. What are you favorites?
