Dinner at the Thompson’s (Weekly Meal Plan)

Hey, hey friends and welcome back to the week. I hope this post finds you well and that your weekend was refreshing. Our weekend was super restful, combined with just enough productive and relaxation time. Landon also took me out for a date night out on Friday, which felt super special. We indulged at our favorite, local taco spot and it was everything a Friday night should be.

Here we are, a new week and a new month – full of new meals to plan and new grocery runs to conquer. I don’t know about you, but I also feel about 20640x better when I have a organized list and meal plan to follow when I enter the grocery store. Otherwise, I end up spending way more money and usually forget the main items I needed in the first place. Please tell me I am not the only one who does this…

So, to make your life (and my life) easier, here is a run down of the weekly meals we are having in our household and if you ask for it (and want it) I can include the grocery list with these posts next week. Let me know!

Monday – Scrambled eggs (I love these for dinner) with roasted sweet potatoes/roasted broccoli

Tuesday – Protein salads (salads with pretty much all the toppings. My go-to’s: sweet potato, avocado, chick peas, cucumbers, red onion, broccoli and homemade dressing)

Wednesday – 7 Veggie, cheese soup (via Oh She Glows) with a side salad + homemade bread

Thursday –  Next level, vegan enchiladas via Oh She Glows  

Friday –  Friday is Landon’s brother’s birthday, which means I am still trying to figure out if we are going out to eat with him or having him over for a home cooked meal. TBD

And that’s a wrap! Now the question is, will I be able to stick to the meal plan. I would like to think, yes.
