Dinner at the Thompson’s (Meal Plans)

Hello friends and happy Tuesday! Here we are full speed ahead into another week and time is FLYING. Seriously, how can we be mid-way into OCTOBER, already? I love October and all things fall and find myself feeling a little sad that we are already mid-way through the month. However, that means we are closer to all the holidays, which I love too!

Below, you’ll find a quick recap of what I have planned for meals for the week. As runners and athletes (Landon is big into CrossFit), aside from workouts/recovery, one of the biggest pieces of importance in our training is FOOD. Food = fuel and it can make or break our performances. I love planning, quality, easy, delicious dinners that fuel our bodies well, taste amazing, and don’t require a million ingredients. Monday – Scrambled eggs + potatoes + kale skillet > sometimes the simplest meals are the best.

Tuesday – Vegan chili (I love making this once a week during the winter months) + giant salad

Wednesday –  Grass fed burgers + roasted sweet potatoes + broccoli (Benaiah’s current favorite)

Thursday – Lentil taco night + homemade guacamole

Friday – Homemade pizza (from the Run Fast, Eat Slow cookbook!) The pizza crust is made with millet! This will be a first time making this recipe, so I am excited to see how it turns out!

Saturday –  Seven veggie soup + salad

Sunday – Leftovers

Oatmeal/banana cookies > literally the easiest things ever. I opted not to use the dates and just used the ripe bananas + oatmeal for the perfect cookie. I didn’t have chocolate chips either, otherwise I would have used those!

And that’s a wrap! Meals planned for the week, easy, filling and delicious. How’s that for a win?
