Dinner at the Thompson Household: Weekly Meal Plans
Hello there friends and happy Tuesday to you! I hope your week is off to a great start. We had a good day yesterday, involving a visit to Grandma and Grandpa’s house and some grass fed beef burgers (plus sweet potato fries, because duh…) Any day that involves sweet potato fries is a good day to me. Also, this is a total side tangent > but I’ve heard good things about air fryers and want to try one out. If you have an air fryer – let me know how you like it! I would love to cook my sweet potato fries in it!

Monday – Grass fed, beef burgers + sweet potato fries and brussel sprouts
Tuesday – Taco Tuesday – Lentil tacos + homemade guacamole
Wednesday – Wednesday, we are hosting a friend over to watch a college soccer game + eat food. One the menu? Vegan Lasagna – (it is SO good!) + side salad + homemade apple crisp for dessert (my own recipe/super clean and delish! I will share soon!)
Thursday – Homemade vegan chili + side salad
Friday – Homemade mac and cheese (Landon’s favorite) with a side of sweet potato fries (Bethany’s favorite) and a tuna steak
Saturday – Leftovers
Sunday – Golden lentil soup + salad
SNACKS
Coconut milk ice cream (gotta have our weekly date night treat!)
