Dinner at the Thompson Household (Meal Plan for the Week)
Hello there friends and happy Tuesday to you all! After a mini vacation, to my parents house, it feels good to get back into the normal groove of life again and get life back in order. We’ve been traveling a lot lately and as much as I love mini vacations or time away from the home, I am ready for some down time, normal weeks, and slow weekends. Fall, you are welcome, anytime.
This time of the year is one of my favorite times for many reasons. I love the cooler running weather, the pumpkin spiced everything, and the warm foods. Even though it still is a little warm this week, it’s not stopping me from bringing out some of my favorite fall recipes!

Monday – Scrambled eggs + whatever veggies we have left + toast (my first low carb day of the week)
Tuesday – Homemade pizza (one vegan pizza with almond cheese – our favorite vegan cheese find is from Trader Joes! and one regular pizza) (my sister in law’s are coming over for a sleepover – what’s a sleepover without pizza, am I right?) + a side salad
Wednesday – Salmon + Thai quiona salad
Thursday – Vegan chili (I make one similar to this recipe) + side salad + bread
Friday – Breakfast for dinner! Scrambled veggie eggs (sweet potatoes + onions + broccoli + eggs) + GF blender pancakes + fruit
Saturday – Leftovers
Snacks
Superhero Muffins (from Run Fast, Eat Slow)
And that’s a wrap! Now the question is, will I be able to stick to the meal plan. I would like to think, yes.
