Blueberry Banana Cupcakes
As promised, I wanted to share one of my favorites recipes. This is one I adapted from Taralynn!
These are perfect for a sweet treat, but packed with nutrients. I usually serve them for dessert, but they are so good for you, you could eat them for breakfast! I love dessert options that leave you feeling good and not with an upset stomach!
Don’t get me wrong, there is a time and place for grandma’s pie and ice cream, but these are a great option to have if you are craving something sweet and still want to stick to your New Year’s resolutions.
Healthy Chocolate Blueberry Cupcakes
3 Large Extra Ripe Banana
2 Tbsp. Vanilla Whey Protein
1/4 Cup Flax Seed
4 Tbsp Unsweetened Cocoa Powder
2 Packets Stevia
1 Tsp Baking Soda
1 Tsp Baking Powder
1 Large Egg White
1 1/4 Cup Fresh Blueberries
Mash bananas until smooth (I used my mixer), add whey, flax, cocoa powder and stevia. Mix until smooth. Once combined, add baking soda, and baking powder. Mix again. Add egg white and stir until combined. Once all ingredients are mixed together, add blueberries and fold into the batter.
Pour 1/4 cup into cupcake liners. Bake at 350 for 17-19 minutes.
Makes 12-13 cupcakes.
Can be served plain or topped with whipped cream!
