Barbecue Lentils
Upon request, (ahem Sunnie ) I have my Barbecue lentil recipe up! I really, really enjoy a good barbecue and have an intense passion for barbecue sauce. I created this recipe when I decided I wanted something different from the average sloppy Joe and in honor of my friend Jessica, who is a vegetarian. After a couple trial runs, I found a winning combination. Hope you all enjoy this recipe as much as we my mom and I did.
Lentil Barbecue:
2 c. Lentils
3 3/4 c. Water (or chicken broth)
Bring lentils and liquid to a boil. Reduce to a simmer and simmer for forty minutes, or until lentils are soft. They lentils should not be runny.
Add to the cooked lentils:
1 Tsp. Garlic Powder
1 Tsp. Onion Powder
1 Tbsp. White Vinegar
1/2 Tsp. (or more if desired) of Mustard
1 Tbsp. Brown Sugar
1/3 c. Ketchup (or favorite sweet barbecue sauce)
Salt and Pepper to taste.
Stir in all ingredients. Bring to a simmer again (if necessary add liquid to texture that is desired). Simmer for 15 minutes. Top on Whole Wheat Bread, Buns, or Lettuce.
