A Little Update and 2 Ingredient Pancakes
Well, hello my lovely readers. This is how I look after late night runs, candidacy at it’s finest. Sorry that I have been a little, MIA lately. It has been a full weekend and start to the week.
This weekend, I spent time with Landon’s family on Saturday and time with Landon on Sunday. It was such a blessed weekend. I wish I could repeat it, not now, but right now!
Monday, I worked straight through the day. 8am- 8pm. As you can imagine, I slept hard last night. I also cleaned/ vacuumed/ shampooed my car. Since the winter, it is amazing how much junk and dirt collects. It felt so good to have cleaned.
After a good sleep, (like I had last night) waking up to the a delicious breakfast is a great way to start the day. (Aside from devotions and coffee!)
One of my favorite weekend breakfasts are my 2 Ingredient Banana Pancakes. When I saw a recipe saying that you could make pancakes from 2 ingredients, I was skeptical. I decided to try it for myself and see what happened. The results pancakes, just like it said.
Now obviously, these are not your traditional white flour ‘carby’ pancakes. However, they are great for those who are avoiding gluten or carbs and to me, they taste like French toast. Could it get better, you ask? Oh yes, it can! The base recipe is super simple, but you alter the recipe to your liking.
Without further ado….
Banana Pancakes
Ingredients:
– 1 Large, Ripe Banana
– 1 Egg
Peel banana and mash well. Add beaten egg to banana, mix thoroughly. Pour batter onto skillet, sprayed with coconut oil. Cook until top is bubbly. Flip once and cook on other side until firm.
One recipe makes 3 medium-sized pancakes.
Enjoy with pure maple syrup, peanut butter, coconut oil, jam, honey, etc.
Optional add ins:
1. Cinnamon
2. Bee pollen
3. Flax seed
4. Whey protein
5. Dried fruit
6. Chocolate chips (mini work best!)
