A Birthday Celebration Weekend
Is it just me, or did this weekend go by more quickly than usual? I feel like I just blinked and here we are at Monday. Our Saturday and Sunday were filled to the brim with time with family, good food, and birthday celebrations, maybe that’s why I feel unusually tired this morning?
Let’s rewind to Saturday morning >>>
Saturday
Our Saturday started off with these protein bites, a four mile run, and a couple strong cups of coffee. After my run, I worked on the house, drank a smoothie, cleaned the kitchen, and got ready to head out to my inlaw’s for my sister in law’s and my birthday celebration while Landon finished up some work for the week. He doesn’t always work on Saturdays, but once in a while he does. This weekend he worked for a few hours in the morning, while Benaiah and I hung out and finished up some Saturday morning working tasks.
A few hours after my run, Landon left for his run and shortly after he was showered, we enjoyed a simple lunch of salad + quinoa.
Is it just me or is a warm bowl of quinoa comforting to anyone else?
After our bellies were full, we hopped into the car and drove out to spend the afternoon and evening with my in-laws in celebration of Nikki’s and my birthday. (Fun fact: our birthdays are exactly one week apart + a couple years 😉 )
Benaiah was quite excited about hanging out with his grandparents, aunts, and uncles. He got plenty of attention from everyone while we prepared homemade pizza for dinner.
More like, I took pictures while the ladies prepared the pizza. Whatever way you look at it, we made ‘garbage pizza’ for dinner and I loved the addition of sauted veggies to each pie. I could have eaten a lot more than the three pieces I polished off, but I restrained myself because we were having ice cream cake for dessert. YESS.
Jenny brought the delicious dessert, it was homemade and beyond tasty. It tasted similar to Dairy Queen’s ice cream cake’s and it took me back to my childhood. Thanks Jenny for the ice cream cake – it fulfilled all of my ice cream cake dreams.

We said our goodbyes around ten o’clock and made it home just in time for bed.
Sunday
Our Sunday morning was brought to us by hot cups of coffee and protein bites for breakfast. We left fairly early in the morning, in order to make it to my parent’s church for the late service and after the service, we headed back to my mom and dad’s for birthday celebration round 2.
My mom made her famous chicken cracker casserole and served it along with steamed corn and her homemade bran buns. Comfort food to the max.
Savannah was still in town, so we decided to get a few quick pictures together before she left to head back to Tennessee.

We spent the rest of the afternoon relaxing, catching up, a playing quite a few rounds of very intense Dutch Blitz. After bowls of ice cream and cups of coffee, I opened up a gift from my parents and we left around eight o’clock.
This weekend was soul refreshing and I enjoyed every single minute of it. I only wish we had one more day of it. I hope you guys had a fabulous weekend and a great week ahead of you!
